Ingredients

  • 1 puff pastry
  • 2 slices of ham
  • 1 onion
  • 1 large can of crushed tomatoes
  • 1 bag of grated cranberry sauce
  • 1 tablespoon of tomato paste
  • Fillet of olive oil

Preparation

  1. Chop the onion into small pieces.
  2. In a saucepan, drizzle a little olive oil and cook the onion.
    1. Cook the crushed tomatoes with the onion and the tablespoon of tomato paste.
  3. Leave to reduce.
  4. Place the puff pastry in a dish.

Calamar a la glacienne

  • 750 g of octopus
  • 750 g potatoes
  • 7 pinches of pimonton salt
  • 4 tablespoons of olive oil

Preparation

  1. Cook the octopus in salted water for 30 to 45 minutes if you bought it cooked, it is not necessary to cook it.
  2. When the octopus has been cooking for about 20 minutes, add the potatoes with their skins to a pot of salted water that is simmering.
  3. Drain them when they have finished cooking.
  4. Peel them and cut them into slices.

Ingredients

  • 1 boneless veal shank
  • 600 g small potatoes
  • 12 purple olives
  • 1 clove of garlic
  • 1 teaspoon ginger powder
  • 1 tablespoon sweet pepper powder
  • 1 teaspoon cumin powder
  • 6 pinches of turmeric
  • 2 tablespoons chopped coriander
  • 2 tablespoons lemon juice
  • 2 tablespoons of oil
  • salt, pepper

Preparation

  1. Cut the meat into pieces and peel the garlic clove.
  2. Heat the oil in a casserole and add the meat, ginger, turmeric, cumin, chilli pepper and garlic and press the garlic through the garlic press.
  3. Stir until the meat turns white, do not let it brown.
  4. Pour 20 cl of water into the casserole and leave to cook for 1h30 on a low heat, stirring often.

  • 1 shoulder of lamb
  • 1 brick of coconut milk
  • 2 green apples
  • 2 tomatoes

Preparation

  1. Bone and chop your shoulder of lamb.
  2. Pour the pieces into a stewpot and roast them to remove all the fat.

  4. Add the chopped garlic, diced onions, and grated apples to the stewpot for 2 minutes on the heat.
  5. Add the tomatoes cut into cubes.
  6. Return the pieces of meat.
